50lbs fresh peaches, with seed removed.
20lbs dextrose sugar
Wine yeast
15gl water

Instructions
Mash peaches till smooth. Heat 7 gl water to boil and to ferment tank with peaches, steep for 60 minutes. Add sugar and enzymes cool with remaining water. Pitch yeast when correct temperature for yeast.
Keep in mind of head space for cap during fermentation

Run on pot still with thumper. Add wash to thumper to help boost flavor
